Huo Mountain Yellow Tea represents the best of this little-known Chinese tea tradition. Like green tea, yellow tea is lightly oxidized. Then it undergoes another step in processing to tone down the green tea grassiness. Huo Mountain contains only young, whole leaves and buds—the most prized part of the tea plant. Without the grassiness, Huo Mountain tastes warmer, rounder, and smoother than any green tea. The mouthfeel most closely resembles a fine Kuki Cha, with its nutty and buttery texture. The aroma conveys a vegetal heartiness—usually found in Japanese teas—but without the deep marine intensity. The flavor dances between savory and sweet. When compared to a green tea, you might call Huo Mountain mellow or hearty. The custardy texture resembles a tippy black tea, but without the heaviness. This is one of the smoothest, most non-astringent, easy drinking teas I’ve ever had the opportunity to drink. First infusion notes: nutty, akin to roasted meat almost, chocolatey, sweet aftertaste. I haven’t done any other infusions yet but I’m sure it will hold up to a few more at least. Very refreshing brew, not heavy at all. This is THE tea.
